How to Use Xanthan Gum
Xanthan gum can help to bind gluten free bread and baked goods, if not already included in your flour blend. For Bread 2 tsp to 500g flour, Cake 1/4 tsp to 200g flour, Pastry a pinch to 100g flour. For Sauce, sieve 1 tsp over 2 tbsp oil, mix into a paste and slowly beat in 500/600ml cold liquid before heating and seasoning.
